Recipe

Baked Dijon SalmonINGREDIENTS:1/4 cup melted non hydrogenated margarine2 1/2 tablespoons Dijon mustard fresh-squeezed juice from lime2 tablespoons honey 1/4 cup dry whole grain bread crumbs 1/4 cup ground walnuts 2 tablespoons chopped fresh Italian parsley 4 salmon fillets (4-6 oz.) teaspoon salt1/8 teaspoon pepperCooking Directions:Preheat oven to 400 degrees F. In one bowl, add margarine, honey, and mustard and mix together. In another bowl, mix in bread crumbs, walnuts, and parsley. Coat (brush) each salmon fillet with honey-mustard mixture and place them in oven dish. Sprinkle fillets with the bread crumb-walnut mixture and place in oven. Bake for 13 to 17 minutes or until salmon flakes easily with a fork. Serve with rice (wild or brown rice) and garnish with lemon wedges and cucumber slices.
